History

It comes from 19th-century Veneto, then under Habsburg rule: soldiers, merchants and officials of the empire found the local wines too strong and asked for a splash of water (spritzen, in German). The bitter liqueurs came later, with Aperol born in Padua in 1919 and Select in Venice in 1920, and only in the 1970s did the modern recipe take hold, with prosecco in place of still wine.
